😋 High Protein Blueberry Crumble !!

🙌 This lemon blueberry crumble is sooo delish you will not believe it is healthy! It’s perfect for a fancy breakfast or even a high protein dessert! 💪

✨INGREDIENTS✨

  • 1.5 cups blueberries
  • 1 tbsp chia seeds
  • Juice of 1/2 a lemon 🍋
  • 40g oats (about half a cup)
  • 30g @vedgenutrition vanilla protein
  • 1 tbsp almond flour
  • 2-3 tbsp water as needed

For the custard on top:

  • 1/2 cup plant milk
  • 2 tsp maple syrup
  • 1/4 tsp vanilla
  • 3/4 tbsp cornstarch mixed with 1 tbsp water to make a slurry

✨DIRECTIONS✨

😋 First add your blueberries, lemon juice and chia seeds to a small pot and cook over medium heat for 5 minutes until jammy. Transfer into a small oven safe dish.

🥄 Add the crumble ingredients into a bowl and add water as needed for the crumble to come together. Add the crumble on top of the blueberries.

🔥 Bake at 350 for 25-30 minutes until golden
