Raspberry Tahini Protein Muffins🌱😍

These are the BEST protein muffins I’ve ever had! 🤤 😍 This recipe is from Natalie over at @fitveganchef who has AMAZING high protein vegan recipes & just released a high protein vegan ebook!! 🤗 Defs check her out for vegan fitness inspo & high protein recipes!! 💪🌱
✨INGREDIENTS✨
- 1 cup mashed banana (about 3 small)
- 2 cups plant milk (I used soy)
- 2 cups oat flour
- 1/2 cup vital wheat gluten
- 2 scoops @vedgenutrition vanilla ice cream protein (64g)
- 1/4 cup ground flax
- 2 tbsp monkfruit sweetener
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/4 cup frozen raspberries
- 2 tsp tahini per muffin
✨DIRECTIONS✨
🍌 Mash your bananas then mix with your plant milk - I used soy but any will work!
🥄 Add in the rest of your wet ingredients and mix until just combined then gently fold in your frozen raspberries
🥰Divide into muffins then drizzle on 2 tsp of tahini per muffin
🔥 Bake at 350f for 35 minutes until golden and enjooooooy!!
