Healthy Low-Cal High Protein Lemon Squares 😍 🍋

These literally taste like dessert but are healthy enough to eat for brekky!! You will be obsessed!!!! 😍😍
✨INGREDIENTS✨
For the crust:
- 1+1/4 cup oat flour
- 1/4 cup maple syrup
- 2 tbsp almond butter
- Pinch of salt
🍋Filling
- 1/2 cup fresh lemon juice
- 1/3 cup cornstarch
- 1.5 scoops @vedgenutrition vanilla ice cream protein (60g)
- 400ml soy milk
- 400ml soy milk
- 1/4 cup unsweetened desiccated coconut for topping 🥥
✨DIRECTIONS✨
🎉First mix together the ingredients for your crust then push it down into a greased pan
🔥 Bake at 350f for 20 minutes until slightly golden
🍋In the meantime make your lemon filling by whisking together all of the ingredients until smooth. Cook over medium heat stirring continuously until it becomes super thick - about 5-10 minutes!
🥰Pour your lemon filling over your crust and flatten it out with a spatula then press your coconut into the filling while it is still warm so it sticks to the filing
🧊 Place in the fridge for at least 3 hours to cool and enjoooooy!!
