Healthy Low-Cal High Protein Lemon Squares ๐ ๐

These literally taste like dessert but are healthy enough to eat for brekky!! You will be obsessed!!!! ๐๐
โจINGREDIENTSโจ
For the crust:
- 1+1/4 cup oat flour
- 1/4 cup maple syrup
- 2 tbsp almond butter
- Pinch of salt
๐Filling
- 1/2 cup fresh lemon juice
- 1/3 cup cornstarch
- 1.5 scoops @vedgenutrition vanilla ice cream protein (60g)
- 400ml soy milk
- 400ml soy milk
- 1/4 cup unsweetened desiccated coconut for topping ๐ฅฅ
โจDIRECTIONSโจ
๐First mix together the ingredients for your crust then push it down into a greased pan
๐ฅ Bake at 350f for 20 minutes until slightly golden
๐In the meantime make your lemon filling by whisking together all of the ingredients until smooth. Cook over medium heat stirring continuously until it becomes super thick - about 5-10 minutes!
๐ฅฐPour your lemon filling over your crust and flatten it out with a spatula then press your coconut into the filling while it is still warm so it sticks to the filing
๐ง Place in the fridge for at least 3 hours to cool and enjoooooy!!
