Healthy Low-Cal High Protein Lemon Squares ๐Ÿ˜ ๐Ÿ‹

These literally taste like dessert but are healthy enough to eat for brekky!! You will be obsessed!!!! ๐Ÿ˜๐Ÿ˜

โœจINGREDIENTSโœจ

For the crust:

  • 1+1/4 cup oat flour
  • 1/4 cup maple syrup
  • 2 tbsp almond butter
  • Pinch of salt

๐Ÿ‹Filling

  • 1/2 cup fresh lemon juice
  • 1/3 cup cornstarch
  • 1.5 scoops @vedgenutrition vanilla ice cream protein (60g) 
  • 400ml soy milk
  • 400ml soy milk
  • 1/4 cup unsweetened desiccated coconut for topping ๐Ÿฅฅ

โœจDIRECTIONSโœจ

๐ŸŽ‰First mix together the ingredients for your crust then push it down into a greased pan

๐Ÿ”ฅ Bake at 350f for 20 minutes until slightly golden

๐Ÿ‹In the meantime make your lemon filling by whisking together all of the ingredients until smooth. Cook over medium heat stirring continuously until it becomes super thick - about 5-10 minutes!

๐ŸฅฐPour your lemon filling over your crust and flatten it out with a spatula then press your coconut into the filling while it is still warm so it sticks to the filing

๐ŸงŠ Place in the fridge for at least 3 hours to cool and enjoooooy!!
